The Effects of the
Six Tastes on the Dosha

Each of the six tastes carries with it either hot or cold energy. Thus, each of the tastes will either increase or decrease a Dosha. It is best to eat foods, which decrease your dominant dosha so as not to experience illness due to excess of a dosha.


Usually, a person will crave the foods that increase their dosha so it is necessary to be cautious and not overeat the foods that will bring your body into a state of imbalance.


Sweet
increases Kapha because it is cool in nature and turns to liquid when heated. It decreases Pitta and Vata and is very nourishing for Vata. We can see the immediate cooling nature of sweet when we eat a chili peeper and follow it with a spoon of sugar the burning effects of the chili will be cooled. Therefore, Pitta people should try to incorporate more sweet into their diets even though it is not their favorite of the six flavors.


Sour
creates fluid in the body and is hot in nature. Therefore it should be avoided by Pitta people and increased for Vata people. Kapha people should eat it in moderation.


Bitter
is cooling and drying and thus should be avoided by Vata and increased for Kapha people Pitta people should eat it in moderation.


Pungent
is hot and drying and therefore is best for Kapha and is warming for Vata but should be taken with liquids to avoid drying. Pitta people should reduce the intake of pungent as they are already hot and pungent quickly results in acidity or burring in the body.


Salt
is hot and moist and thus should be avoided by Pitta, eaten by Vata people and avoided by Kapha people.


Astringent is constricting in the body. It is mainly a flavor used for cleansing and is not very common in it's strongest form in foods-unripe fruits are astringent as is tea. It instantly dries out the mouth and of course has a similar effect on mucus and water in the body. This makes it a great flavor for Kapha but should be avoided by Vata who is already too dry and taken and taken in moderation by Pitta.
