Beltaine, also called May Day by many Christians. This Sabbat celebrates the fertility and union of the Horned God and the Goddess. At this time, life is renewing itself. Birds and animals are mating. In the fields, newly planted seeds are beginning to grow. Great fires are lit honoring the fertility God Belenos. Some leap the fires to show the exuberance of the season.


A Maypole is erected and bright ribbons are hung on it. The Maypole, a phallic symbol, represents the masculine. The soft colored ribbons are the feminine. The union of the two symbolizes the union of the God and Goddess. This is the time to fertilize your dreams with action.. I personally make a new wreath each year with the traditional bright colored ribbons to greet my guests throughout the month of May.


HERBS:

Honeysuckle, St. John's wort, Hawthorn, All flowers.


INCENSE:

Frankincense, Lilac, Rose.


COLOR:

Green, Soft pink, Blue, Yellow.


DECORATIONS:

Maypole, wreaths, designed with strings of beads or flowers, Ribbons, Spring flowers


Things to do:

Decorate altar with:
-Tons of flowers
-Lots of candles
-Figurines of the Horned God and the fertile Goddess
-A special Beltane candle for wishes
-Any other symbols of spring, fertility or the earth.
-Wreaths of flowers
-White and red ribbons


FOOD:

Dairy, Oatmeal cakes, Cherries, Strawberries, Wine, Green salads


RECIPES

Beltane Oat Cakes

1 1/2 cups oat flour
1/2 tsp baking powder
1/2 cup brown sugar (to make them sweeter use up to one full cup)
3/4 cup butter (unsalted)
1 egg
1 cup mashed ripe fruit (banana, peaches, something soft)
1 3/4 cup rolled oats
Spices: nutmeg, cinnamon is a good combo or cardamom is nice by itself (approx. 1/4 tsp)
1/2 cup chopped nuts (optional) Mix flour, baking powder, and brown sugar together, make sure to smash any lumps. Cut butter into mixture with a pastry blender (or make do with a fork) add egg and fruit, and nuts. Drop rounded tablespoon of dough onto greased cookie sheet (about 2-3 in apart). Bake at 350 deg F (175 deg C) for 15 min or until cookies look "dry".


Oatmeal Bread
1. 1 cup evaporated milk
2 TBSP vegetable oil
1TBSP vinegar
1cup all purpose flour
1 cup firmly packed brown sugar
1tsp baking soda
1/2 tsp salt
1 cup raisins or chopped nuts
Beat milk, oil and vinegar in mixing bowl until smooth
Add oats, flour, brown sugar, baking soda and mix well
Add nuts or raisins turn into loaf pan bake at 350 for 50 - 60 minutes or until done depending on the oven


Food for Love
Peach Melba With Raspberry Sauce
Serves: 2

2 fresh peaches, peeled and halved
2 cups nonfat vanilla ice cream
Sliced almonds
Fresh raspberries
Fresh mint leaves
1 cup fresh or frozen raspberries
2/3 cup sugar (if the berries are unsweetened)
2 tablespoons apple juice or water
1 tablespoon lemon juice
2 tablespoons cornstarch 1. Place peach halves in desert dish.
2. Top each with one scoop ice cream.
3. Spoon about 1/4 cup warm raspberry sauce (See directions below) over
each serving.
4. Garnish and serve immediately. Raspberry Sauce: In a small saucepan add the berries and sugar. Tip the pan and on one side
add the apple juice or water and lemon juice. Mix in the cornstarch. Turn on
the heat and stir until thickened, about 3 minutes.
